Sweet Potato Bun for the Best Hamburger Recipe

Easy Weeknight Meals, Paleo, Recipes

Spring, it’s your time. Do your thing.

You see, it’s been cold around here. I mean, it snowed. In South Carolina. Where it does not snow.

So, I am all giddy and ready for spring to make her appearance.

Jeremy on the other hand is wearing gloves and beanies and sweaters like cold weather is his best friend. And clearly, I am his best friend 🙂

But really, I am actually wearing all those things too but it is because Florida changed my blood and anything below 50 degrees calls for some mittens. And two pairs of socks. And leg warmers. And can someone please invent something for just the tip of my nose?

Anyway when it did snow a few weeks ago Jeremy went out and ran 5 miles. He ran 5 miles. In the blizzard. Because of course, why not?!

What?

I, on the other hand, “found” a bottle of champagne and put it in the snow to chill. Which is really what snow is good for. Chilling.

I give you exhibit B:

As you can see, little bear was all for this.

It was my own personal celebration of, “Yay! It is snowing. Let’s celebrate being able to stay indoors and cuddle.” Of course, Jeremy was not to be found.

Because, as we have covered, he was outside running.

But this past weekend we both decided to grill. Because, seriously spring. Come on!

During the grilling, a sweet potato bun happened.

Yes. It. Did. I posted it on Instagram. And some of you asked for it! And I love when you ask for recipes!! So here it is.

Sweet Potato Bun for the Best Hamburger Recipe

So you see, it starts with sweet potatoes 🙂

Try to find a really fat (read: wide) sweet potato because it will be the “bun” for your hamburger. And for the hamburger, you know we have recipe for that too? The best burger recipe.

Peel the sweet potato. Cut as many rounds as needed (2 rounds per person). I toss it in some olive oil, salt and pepper and a bit of dried dill!

If you cook your burger on the stove top you can use the same pan to cook your sweet potato rounds. Just remove some of the fat after the burgers are done and then you can add the sweet potatoes right to the pan.

These cook quickly! About 3 to 4 minutes on each side.

Sweet potato bun goodness.

While those cook I prep my burger toppings.

See how much spring is on that board! Come here, spring!!

Then we assemble. And serve.

She wanted a close-up. This is her debut after all.

You know Jeremy, he picked that thing up with two hands and ate it all just like that. I, on the other hand, could not get my mouth around all of it so I had to resort to a fork.

Either way, delicious.

How do you call out to spring?

Sweet Potato Bun

  • Prep Time: 3 minutes
  • Cook Time: 5 minutes
  • Total Time: 8 minutes

Ingredients

Scale
  • 1 fat sweet potato
  • Salt
  • Pepper
  • 1/2 TBS Coconut Oil

Instructions

  1. Peel the sweet potato. Cut the potato into 1/4-1/2 inch rounds.
  2. The middle of the sweet potato is best for being used as “buns” as that is where they are widest.
  3. Drizzle some olive oil on them and sprinkle on salt and pepper. Toss to coat.
  4. Heat a skillet on medium heat. Add 1/2 TBS coconut oil.
  5. Once the oil melts add the sweet potato rounds. These cook fast! About 3-4 minutes on the first side and only 2-3 on the second.
  6. Serve as you would a hamburger bun 🙂

This looks yummy! Curious, what is the texture like of the sweet potato – do you have to work to break through it?

    • Bri McKoy says:

Thanks, Maryn 🙂 And no, it is not tough to cut through at all. Sweet Potatoes become very soft once they start to cook. So, for this “bun” I only cook it 3-4 minutes on each side to get a nice crust but not so long that it is mushy on the inside 🙂

  2. maria says:

Made them tonight. They were so delicious! And I’m not a fan of sweet potatoes unless there is sugar on them. Will make again! I used the smaller rounds for chips:) yummy

  3. Michelle says:

    Hi Bri,

I will definitely have to try these. They look amazing! My husband has celiac disease, so we usually just have hamburgers without buns. This looks much better.

    Thanks,
    Michelle

Is it bad that I *just* finished one and am dreaming of the ones I plan to make tomorrow? I made a “mayo” using avocado and hot sauce mixed together. So divine!

  5. Katforever18 says:

WOW! Who would have thunk? LOL I LOOOOOVE sweet potatoes but NEVER would have thought to use them as a bun much less cook them that way. I may just cook some like that just to eat because I love them anyway I can get them & prefer them over regular french fries ANY day!! Thanks I do plan on trying this!!
    🙂
