There are soups you make because it’s cold.

There are soups you make because you forgot to meal plan.

And then there is this soup!

This is my Heal Me Now Chicken Soup and I make it when I am feeling a little under the weather, either physically or emotionally. There is something about bringing this soup together that feels healing…and then the ingredients take it to the next level to nourish and care for my body.


The “Heal Me Now” Power Players

We aren’t just throwing things in a pot and hoping for the best. This soup is a carefully curated squad of ingredients designed to make you feel human again!

1. The Dynamic Duo: Turmeric & Ginger

If inflammation were a villain, Turmeric would be the superhero in the bright orange suit. It’s famous for its anti-inflammatory properties, giving your body that much-needed “calm down” signal.

Ginger is the zesty sidekick. It’s incredible for digestion and settling a grumpy stomach. Plus, it provides that subtle, spicy kick that clears the sinuses faster than you can say “tissue, please.”

2. Homemade Chicken Stock: The Liquid Gold

Store-bought broth is fine for a Tuesday, but for a “Heal Me Now” moment? We go homemade. Real stock is packed with collagen, amino acids, and minerals that you just can’t find in a cardboard box. It’s the soul of the soup: rich, silky, and deeply comforting. It’s basically the culinary equivalent of a weighted blanket!

3. Fresh Parsley: The Vitamin C Confetti

Never underestimate the power of a garnish! Adding a handful of fresh parsley at the very end isn’t just for the aesthetics (though it does look great for a photo!). It adds a burst of Vitamin C and a hit of freshness that cuts through the richness of the stock. It’s the “final flourish” that tells your taste buds the party has officially started.

Ingredients

Scale

1 Tbsp olive oil

1 Tbsp butter

1 small onion, chopped

3 carrots, chopped

3 stalks celery, chopped

3 cloves garlic, minced

1 tsp dried turmeric (or 1 Tbsp fresh turmeric, grated)

1 Tbsp fresh ginger, grated (or 1 frozen ginger cube)

1 tsp dried oregano

2 tsp kosher salt

1 tsp freshly cracked pepper

23 cups cooked, shredded chicken

6 cups chicken broth or stock

1 package egg noodles

1 bay leaf

45 sprigs thyme

1/4 cup freshly chopped parsley

Instructions

Heat a soup pot on medium heat with olive oil. Add the carrots, celery, and onion and sauté for 5 minutes, or until the onions are translucent but not browned. Add the garlic and stir until garlic becomes fragrant, about 1 minute. 

Add the turmeric, ginger, oregano, salt, and pepper, and stir to let the spices bloom. Add the chicken and stir to coat it in the spices. Add the chicken broth, slowly pouring it in to deglaze the bottom of the pot. Add the egg noodles. Top with the sprigs of thyme and bay leaf.

Bring to a boil, then simmer for 15 minutes, or until the egg noodles are cooked.

Remove the thyme sprigs and the bay leaf. Add in the freshly chopped parsley. Stir and ladle up!
