Lemon Chicken Skewers with Butter Garlic Sauce

If you’re looking for a weeknight meal that is simple, quick and is packed with flavor, look no further! My lemon chicken skewers with butter garlic sauce will become a new weeknight staple for you.

The chicken marinates in a flavorful lemon sauce and then is grilled until it is golden brown and juicy! The key to ensuring the chicken is juicy and does not dry out is to pack the chicken cubes tightly onto the skewers.

Grilling these takes no time at all and prepare for the neighbors to come ask what you are BBQing because these smell so good.

I love serving this with my refreshing and bright Mediterranean couscous which you can pull together that morning and allow to chill in the refrigerator until it is dinner time!

The bonus of this dish is that after the chicken is grilled, I drizzle it with a butter garlic sauce! I also serve these skewers with some pita bread (that I warm on the grill) along with store-bought hummus (Trader Joe’s is my favorite!). It’s the perfect summer meal!

Ingredients

Units Scale

For the Chicken:

1.5 lbs boneless, skinless chicken breasts or thighs cut into cubes

1/4 cup olive oil

Juice from one lemon (about 23 Tbsp)

2 tsp kosher salt

2 tsp lemon pepper seasoning

For the Butter Garlic Sauce:

1 tsp lemon zest

3 Tbsp melted butter

2 garlic cloves, minced

Pinch of kosher salt

To Serve:

Favorite store-bought hummus

Mediterranean couscous or basmati rice or pita

Instructions

For the Marinade

  1. Add the chicken cubes to a container with a lid or a resealable bag. Mix together the olive oil, lemon juice, kosher salt, and lemon pepper seasoning. Pour the dressing over the chicken. Allow to marinate overnight or for at least 2-4 hours.

For the Butter Garlic Sauce

  1. Mix all the sauce ingredients together and set aside until the chicken is done.

For the Grill

  1. Tightly thread the marinated chicken onto metal skewers (if you are using wood skewers, you will need to soak them in water for several hours before using them on the grill).
  2. Preheat grill to medium-high heat, about 350 degrees F.
  3. Grill the skewers for 10–12 minutes, turning occasionally every 2-3 minutes, until the chicken is charred in spots and cooked through (internal temp 165°F).
  4. Place the chicken on a platter and drizzle with butter garlic dressing.
  5. Optional: If you are serving with pita bread, cut the pita into triangles and place on grill to warm for about 1 minute on each side!

For the Oven

  1. Preheat the oven to 425 degrees.
  2. Thread the marinated chicken tightly onto metal skewers. Place the skewers on a well-greased baking sheet. Bake for 20-25 minutes, flipping the skewers halfway through the baking time. The chicken is done when it reaches an internal temperature of 165°F.
  3. Place the chicken on a platter and drizzle with butter garlic dressing.

To Serve

Remove the chicken from the skewer and dish up. Serve with Mediterranean couscous, favorite store-bought hummus and pita.
