Is my favorite sound in a restaurant the sizzling chicken, steak, or shrimp that is being delivered in an atomically hot cast iron skillet to a patron who ordered fajitas?! Yes. Yes it is.

I wanted to recreate this delight at home and I wanted to make sure my chicken was juicy and bright! I also wanted to serve it with a zesty sour cream sauce and some homemade tostadas!
Below is a complete guide for you! Do not skip on the sauce!

Ingredients
For the Chicken:
2 lbs boneless, skinless chicken breasts or thighs
1/4 cup tequila
Juice of 2 limes
Juice of 2 oranges
2 teaspoons kosher salt
For the Fajitas:
1 Tbsp olive oil
1 Tbsp butter
2 bell peppers, sliced
1 white onion, sliced
1 tsp salt
For the Tostadas:
Mini white or yellow corn tortillas (street taco size)
1/2 cup high-heat oil (such as avocado oil, vegetable oil, or Frizzle from Graza)
For the Zesty Sauce:
1/2 cup mayo
1/2 cup sour cream
3 Tbsp pickled jalapeño juice
3 Tbsp pickled jalapeños, diced
1 tsp paprika
1 tsp cumin
1 garlic clove, minced
1 tsp salt
1/2 tsp chili powder
Juice from 1/2 lime

Mix together the tequila, lime juice, orange juice, and 2 teaspoons of kosher salt. Pour over chicken and marinate for at least 2 hours (or overnight). (If you are using chicken breasts, filet them or pound them out so they are of even thickness and will cook evenly.)

In a large cast-iron skillet over medium-high heat, add 1 Tbsp of olive oil. Once heated, add the chicken. Cook for 5-6 minutes on each side. Remove from the pan and tent with foil.

To the same skillet the chicken was in, add another 1 Tbsp of oil and 1 Tbsp of butter. Add the sliced bell peppers and onion. Sprinkle with 1 tsp salt and sauté for 3-5 minutes. Meanwhile, slice the chicken and add it to the skillet with the veggies after they cook. Toss and allow it to get nice and sizzling. Remove from heat. Top with lots of fresh cilantro.

After you add the chicken, heat the refried beans in a pot over medium-high heat until warmed through.

In a sauté pan, add 1/2 cup of high-heat oil. Allow it to heat up, about 3-4 minutes. Add in a tortilla (as many as will fit in the pan). Flip the tortilla every 30 seconds until it is nice and golden brown on both sides. Remove to a paper-towel-lined plate or sheet tray. Repeat with remaining tortillas.
Zesty Sauce Instructions
Mix everything together in a bowl. Refrigerate until ready to serve!
Notes
To Serve:
Spread some refined beans over your tostada and top with cheese. Add some chicken fajitas. Top with shredded lettuce, sour cream, hot sauce, and anything else you like! Drizzle with zesty sauce. Enjoy!
