Perfectly Roasted Vegetables

Ingredients

  • 35 carrots
  • 1 rutabaga
  • 1 red onion
  • 1 green pepper
  • 1/4 cup olive oil
  • 1/2 tsp dried dill
  • 1/2 tsp dried thyme
  • 1/2 TBS salt
  • 1/2 tsp freshly ground black pepper

Instructions

  1. Preheat the oven to 425 degrees
  2. Put the roasting pan in the oven while it preheats
  3. Peel and cut all the vegetables to the same length and thickness
  4. Add all the veggies into a large bowl
  5. Add the olive oil, the herbs and the salt and pepper and toss with the vegetables to coat fully
  6. Pull the roasting pan out of the oven and throw in the veggies
  7. Spread the veggies out so they are not crowded
  8. Put them in the oven for 15 minutes
  9. After 15 minutes turn the veggies
  10. Put the pan back into the oven for 15 to 20 more minutes
