1 lb rotini pasta (I like this pasta because the cheese bits get in the spirals, but by all means, go with your fav pasta!)
3 Tbsp butter
1/2 cup Parmesan cheese
1 Tbsp + 1/4 cup olive oil
Two 12-oz packages cherry tomatoes, sliced
1 tsp white sugar
2 tsp kosher salt
3 garlic cloves, minced
1/2 Tbsp red wine vinegar
Fresh basil
Fresh Cracked Black Pepper
Drizzle of olive oil
Shaved Parmesan
Cook the pasta according to package instructions.
While the pasta cooks, in a sauté pan, add 1 Tbsp oil and allow to heat over medium-high heat. Add 1/2 of the sliced cherry tomatoes. Allow to sauté for about 3 minutes and then, using a masher or a wooden spoon, mash the tomatoes completely. This will give us a nice juicy sauce. Add the sugar and salt. Stir for another minute, remove from heat. Stir in the fresh garlic and red wine vinegar, stir to combine.
In a large bowl, toss the pasta in the butter and Parmesan cheese. Once the sauce on the stove is done, add it to the pasta and toss to combine. Add the rest of the fresh sliced tomatoes. Gently toss. Place in refrigerator for at least 1-2 hours or until ready to serve. Before serving, add fresh Basil, freshly grated Parmesan, a drizzle of olive oil, and some additional kosher salt and freshly cracked black pepper! ENJOY!
